Flagstaff butcher shop and deli focuses on local, organic meat

Proper Meats + Provisions in Flagstaff is more than a deli or a butcher shop; it’s a new way of looking at the meat you eat. And that is exactly what restaurateurs Paul and Laura Moir — the husband and wife creative team behind Brix and Criollo Latin Kitchen in Flagstaff and Proper in Tucson — intended when they opened the establishment in September 2014.
 
The concept stemmed from the difficulty they had sourcing sustainable, organic, and local meats for their restaurants. They saw an opportunity to open their own butcher shop, one that could provide local meat for their restaurants as well as for the community. 
 
Much of the meat — including beef, pork, chicken, turkey, duck, and lamb — comes from Arizona ranchers and is raised on sustainable and organic farms. It’s presented in the butcher shop’s glass case as steaks, roasts, sausages, and cuts most consumers would not recognize, since Proper Meats practices whole-animal butchery. “There’s an educational component,” Paul Moir says. “It’s not a grocery store meat counter. It’s an opportunity to experience different cuts and try new recipes. It’s fun.”
 
Proper Meats makes its own deli meats, which you can purchase from the case or enjoy in made-to-order deli sandwiches such as Philly cheesesteak, cold cuts, or roast beef. A burger made with local beef, a farm fresh fried-egg sandwich, a field salad with mustard vinaigrette, and other delicious items are on the menu. The most popular dish? The warm pastrami sandwich with grilled onions and Swiss cheese on grilled rye bread, according to Paul Moir. 
 
Finding a place to eat in the 12-seat dining area can be a problem, though, so Proper Meats collaborated with Historic Barrel + Bottle House, located in the same building, to serve food in the tap house. (The menu offered here is slightly different than the deli’s.) 
 
While it’s worth the drive to Flagstaff for the butcher shop experience, soon central Arizonans won’t have to go as far. Space has already been purchased next to Proper in Tucson for a second Proper Meats location (possibly opening as early as this summer), and the team is currently looking for space for a third location in Phoenix.
