Pizzeria Mimosa’s Spaghetti all’amatriciana

Authentic Italian favorites with mountain views can be found at Pizzeria Mimosa just outside of Sierra Vista. This dish currently is on the menu as a fundraiser for earthquake victims of Amatrice, Italy. The restaurant is donating 2 euros per dish for a year.
Spaghetti all’amatriciana (serves 4)
18 oz. dry spaghetti
4.5 oz. diced guanciale (pork jowl) or pancetta
1 Tablespoon of extra virgin olive oil
A drop of dry white wine
Six or seven San Marzano tomatoes or 14 oz. canned peeled tomatoes
Some dried chili
3.5 oz. grated pecorino
Salt to taste
Place the oil, chili, and guanciale or pancetta into an iron pan. Sauté these ingredients, then add the wine. Blanch the whole tomatoes so you can easily remove the skin, then quarter them, remove the seeds, and add to the pan. Alternatively, use canned tomatoes. Season with salt and allow the sauce to cook over medium heat for a few minutes. In the meantime, boil salted water and cook the pasta until it is al dente, still slightly firm. Drain and place in a bowl. Add the grated pecorino. Wait for a few seconds and then add the sauce to the bowl and stir together. If you wish, you can add more pecorino after it is served.
